Street food (SF) is defined as out-of-home food consumption, and generally consists of energy-dense meals rich in saturated fats and poor in fibers, vitamins and antioxidants. Though SF consumption may have unfavorable metabolic and cardiovascular effects, its possible association with atherosclerosis has not been considered. The association between habitual SF consumption and asymptomatic carotid atherosclerosis, defined as the presence of plaques and/or increased intima-media thickness, was therefore investigated. Analizziamo qui un tipo di cibo da strada noto a Palermo come rosticceria. Si tratta di un insieme coerente e composito di pietanze che fanno parte di una gastronomia locale, popolare ed economica, e con una valorizzazione fortemente pratica: puro “cibo rifornimento”. The article investigates the gastronomic universe of street food through two steps. The first is theoretical and highlights what are the founding semantic categories of street food with respect to other culinary worlds (home cooking, fast food, etc.) and, through this specifically relational point of view, also explains the transformations and inversions between systems of values that are in principle opposite. This paper is about tourist reviews of a specific gastronomic universe: street food. Specifically, I will deal with reviews from the Tripadvisor platform dedicated to street food places in the city of Palermo. The idea of focusing on reviews comes from the hypothesis that, since this type of textuality is an utterance at the end of a path, and is therefore the Sanction in narrative terms, we can reconstruct from reviews, by presupposition, the value systems that the enunciator-tourist projects on the gastronomic experience.
